A new month brings a new season as we wrap up summer and head into our crispier fall days. And what better way to bring in the autumnal equinox this month than with the exciting option between 3 very tasty Austrian selects! Three “wild” wines are from the wine producer, Kolfok, in Austria and mimic the meaning behind the word Kolfok itself. Meaning “unconventional thinker”, Kofolk winery dates back to the 19th century, yet these wines take a more natural approach in its making, highlighting its balanced yet exciting flavor profiles in the wines. All the Kofolk wines are made with love and pristine precision, and we are sure you’re going to love them as well!

Kolfok Intra! The Wild White (2022)
A classic Austrian white blend of Grüner Veltliner and Welschriesling, this white wine blends tradition with novelty. The grapes in this white wine are on the leaner, lighter, aromatic side, but winemaker Stefan Wellenschitz’s use of intercellular fermentation brings out the complexity in these grape varietals for a textured taste on the palate. Super dry, super citrusy, and super tasty with notes of stone-fruits and white flowers! This wine pairs nicely on its own very chilled, or with a heartier meal, like chicken or a buttery white fish. This is the perfect wine to transition into shorter days and chillier evenings while still embracing the last hint of summer!
Kolfok Intra The Wild Rose (2022)
100% Blaufränkisch and 100% delicious! This rosé is crafted from organically grown Blaufränkisch grapes, offering a unique expression of the local vineyard's character. The wine showcases the dedication to natural and minimal intervention winemaking practiced by Kolfok. With vibrant tasting notes of fresh red berries, including strawberry and raspberry, complemented by hints of wild herbs and a touch of citrus zest. The wine has a crisp and refreshing acidity, balanced with a delicate minerality that adds depth to its flavor profile. The color is a beautiful, pale pink, indicating its light and approachable nature. This rosé is best enjoyed chilled, and pairs wonderfully with a variety of dishes, from light salads and seafood to grilled vegetables and charcuterie.
Kolfok Intra! The Wild Red (2022)
100% organically farmed Blaufrankisch from a cool north facing vineyard. Destemmed, intracellular fermentation. Aging takes place in large used 1200 liter Austrian barrels. No additives at all, this wine is fresh, spicy, and bright, showcasing a clean and non-interventionist winemaking style. While being similar to our beloved rose and also enjoyed chilled, this crushable juicy red should be sipped on with food accompaniment to bring out its aromatic flavors. This wine is the perfect transition from summer to fall as it makes the perfect addition to those last minute summer BBQ’s or cozy pizza nights at home. Chill, pour, serve, and enjoy!
